Just as all tea, green tea begins with plucked leaves from the camellia sinensis plant.  These leaves, however, are quickly steamed or heated for several minutes to prevent the oxidizing process.  Because of this minimal processing, green teas most resemble the original green leaf and are often vegetal and fresh in flavor with a lighter yellow and green appearance.

Green teas have been considered the classic teas of China, and today China has set the international standard for them. Nevertheless, several countries such as Japan, Korea, India and Sri Lanka also produce flavorful and aromatic green teas with their own special characteristics.
